(More customer reviews)Xantham gum is essential to any gluten-free baking. You can use guar gum but it just isn't as good. This is top quality product, and a little goes a long way. Most recipes only call for a teaspoon or two. An order of 6 8-ounce packages should last an average household two years (unless you bake bread twice a week, then it's only a year maybe :-) ).
One caveat - this is a very fine dust and it is best handled carefully... unless you like a pricey haze of xantham around your kitchen.

Premium quality. Xanthan Gum is made from the outer layer of a tiny, inactive bacterium called Xanthomonas campestris. It is an excellent all purpose thickener for dressings, gravies and sauces. Its unique ability to hold small particles of food together makes it the ideal substitute for gluten in gluten-free baking. Most recipes call for only 1 or 2 teaspoons, so it goes a long away. Gluten free. Bob's Red Mill products labeled gluten free are batch tested in our quality control laboratory. We use an Elisa gluten assay test to determine if a product is gluten free. All natural.
